Years ago when Corinne and I first established a home together, Ruby (my mother-in-law) gifted us a copy of her recipe book know as Ruby’s Recipes (you can get a copy on amazon see link at bottom of blog). Ruby ALWAYS has buns ready at her home and I decided I should try making these buns. So I open Ruby’s Recipes to the breads section and called her and asked which one is her famous bun recipe. I found it and then noticed the the recipe used to make the famous GoGo Buns (Fermipan) was just that, a recipe. In the spirit of “there has to be a better way” I am going to share how I bake these buns.

Note the salt typo is corrected in the current recipe book
A few years back I embarked on a mission to spend time with Ruby to learn how to make the buns everyone loves. Below is how I make them now:

Add Sugar, 1 cup warm water and yeast to bowl. I use Fleischmann’s Quick Rise. Let rise for about 20 mins
Add remaining wet ingredients including 2 more cups of warm water to mixing bowl
Add salt and start gradually adding flour to the mixing bowl
Mix with paddle until sticky
Then change over to dough hook. I have made these buns just using the hook
Take dough out of mixing bowl and place in large bowl to rest. I cover with a tea towel
Allow the dough to double in size and then knock it down by hand kneading the dough
Allow it to double in size again. It shoud be larger than the first time
Pinch the dough into buns. This is a skill I am still working at
Place on trays and let them double in size
Bake in oven 350 degrees for 20 mins
Place on cooling rack and enjoy
Now you can enjoy some GoGo buns or what my daughters now call Dad buns. If these steps are not enough I am sure Ruby and/or myself will spend time with you to teach you.
What I didn’t realize at the time of learning from Ruby is that I enjoy baking breads. I think it is the process of conversion and this is similar to woodworking converting raw material to finished product through steps.
